How it works
Vitamin C, or ascorbic acid, is a water-soluble vitamin that humans cannot make, so it must come from food or supplements. It acts as an antioxidant, donating electrons to help neutralise free radicals, and it recycles other antioxidants such as vitamin E. It is also a cofactor for enzymes that build collagen, the protein found in skin, blood vessels, cartilage and bone, and it is needed to make carnitine and some neurotransmitters. Vitamin C improves the absorption of non-haem iron from plant foods. It is absorbed in the small intestine by specific transporters that become saturated at higher intakes, so absorption percentage drops as the dose rises. Extra is passed out in the urine. Buffered forms such as calcium or sodium ascorbate are less acidic and may suit sensitive stomachs, and bioflavonoids are sometimes added in supplements (NIH Office of Dietary Supplements).
