How it works

Cinnamon is the dried inner bark of trees in the Cinnamomum genus. Two main types are sold: Ceylon cinnamon (Cinnamomum verum), sometimes called true cinnamon, and cassia (Cinnamomum cassia), the more common and cheaper type. Its aroma and flavour come largely from cinnamaldehyde, and the bark also contains polyphenols such as procyanidins that have antioxidant activity. In laboratory research, these compounds appear to interact with insulin signalling pathways in cells, which is why cinnamon is studied in relation to normal glucose metabolism. Traditionally, cinnamon has been used to warm the body and to support digestion. The key difference between types is coumarin, a natural compound found in much higher amounts in cassia than Ceylon cinnamon. High coumarin intake over time may stress the liver, so Ceylon cinnamon is often preferred for regular use. Cinnamon has been used in traditional Chinese and Western herbal medicine (European Food Safety Authority, on coumarin limits).

Common questions

What is the difference between Ceylon and cassia cinnamon?

Ceylon cinnamon is milder and sweeter and contains very little coumarin. Cassia is stronger and cheaper but has much more coumarin, so Ceylon is generally the better choice if you plan to use cinnamon often.

Can I take cinnamon every day?

A small amount in food is fine for most people. For supplements, stick to the label dose and prefer Ceylon cinnamon for daily use because of its lower coumarin content.

Safety

Cassia cinnamon contains coumarin, which in large amounts may affect the liver, so do not exceed the label dose. Speak to a healthcare professional before use if you have liver problems, take blood-thinning or blood sugar-lowering medicines, or are pregnant or breastfeeding.
