The kitchen classic with a tradition behind it.

Love garlic in your cooking? Did you know its signature aroma comes from sulfur compounds like allicin, released when a clove is crushed? It may help support heart health and immune function.

Garlic is one of the oldest medicinal foods in the world, valued by the ancient Egyptians, Greeks and Chinese. When a clove is crushed, a sulphur compound called allicin forms, which gives garlic its sharp aroma and much of its traditional reputation. Garlic supplements make it easy to enjoy these benefits without the strong smell or taste. Many people take garlic to support healthy circulation, digestion and general wellbeing, particularly through the cooler months.

The science behind it

Intact garlic cloves contain alliin, a stable sulphur compound. When a clove is cut or crushed, the enzyme alliinase converts alliin to allicin, which is unstable and quickly breaks down into other sulphur compounds such as diallyl disulphide. These compounds are responsible for garlic's odour and are thought to drive many of its effects.

In the body, garlic sulphur compounds are metabolised into hydrogen sulphide, a gas the body uses as a signalling molecule to relax blood vessels. This is a proposed mechanism behind garlic's role in supporting healthy circulation.

Different forms vary:

  • Fresh garlic: highest allicin when crushed and left for about 10 minutes before cooking.
  • Garlic powder (allicin-yielding): designed to release allicin in the gut. Enteric coating protects the alliinase enzyme from stomach acid.
  • Aged garlic extract: allicin is converted over months into stable compounds such as S-allyl cysteine, with less odour and gentler effects on digestion.
  • Garlic oil: contains mostly breakdown products of allicin.

A Cochrane review (2014) found limited evidence on garlic for the common cold, noting one trial where garlic reduced the number of colds. Research quality varies, so garlic is best seen as a supportive food-based herb.

Common questions

What is allicin?

Allicin is the main sulphur compound formed when garlic is crushed. It gives garlic its smell and is thought to be behind many of its traditional benefits.

Is raw garlic better than a supplement?

Raw garlic is a great option if you enjoy it. Supplements offer consistent amounts without the odour or stomach irritation some people get.

What is aged garlic?

Aged garlic extract is made by ageing sliced garlic for many months. This produces stable compounds and much less smell. It is gentler on the stomach for many people.

When is the best time to take garlic?

Take it with food to lower the chance of heartburn or stomach upset. Follow the label directions.

How long does garlic take to work?

For circulation support, studies usually run for 8 to 12 weeks. For a cold, people often start at the first sign of symptoms.

Does garlic cause bad breath?

Yes, it can. Aged or odour-controlled products tend to cause less. Taking it with a meal can also help.

Safety

Garlic can increase the effect of blood thinners (such as warfarin) and some HIV medicines, and may increase bleeding risk. Stop supplementing before surgery as directed by your doctor. Seek advice if you are pregnant or breastfeeding. Large amounts may cause heartburn or stomach upset.
